Blötbröd/Tjörbokaka (Wetbread/Tjörn-resident cake)

This bread is from Bäckevik in Tjörn on Swedens west coast. According to my grandfather, the bread was baked in a wood-fueled oven and hung up on a stick in the ceiling in the attic to avoid the rats. Many were fishermen at that time and were not able to bring fresh bread out on the sea. Instead they would get this hard bread that they could soften up in their coffee. Traditionally you break the bread into small peices, sink them down into a cup of coffe, fish them out with a butter knife and eat them with as much butter as you dare. If you do not like soggy coffe bread you can still eat it hard. (My grandfather's father's youngest brother Evert's wife Inga has modified the recepie to electric ovens, so we without a wood-fueled oven can make it too!)

Ingredients:
  • 1 kg Wheat flour
  • 1 handful Graham flour
  • 1 handful Sugar
  • 50 g Yeast
  • 1/2 tsp Salt
  • 0,75 liter Water and milk mixed (equal parts)
  • 125g Butter
  • 1/2 Egg


  • 1. Heat oven to 225 C
    2. Melt the butter in a pot.
    3. Pour in water-milk mixure, heat until as warm as your finger.
    4. Crumble yeast into a bowl. Sprinkle in the salt and pour in the lukewarm mixture.

    My Great Grandmothers "Chokladsnittar", a.k.a Swedish Chocolate Cuts

    This is a classic Swedish cookie and is often considered as one of the iconic "Seven Cookies", mandatory for a traditional Swedish coffee party. They are simple but delicious. I recommend them for cooperation dinners and as gifts.

    Total time: 1 hour
    Portions: Around maybe 90 cookies

    Ingredients:
  • 200g Butter
  • 2 dl Sugar
  • 1 Egg
  • 2 tbs Cocoa powder
  • 5 dl Wheat flour
  • 2 tsp Baking powder
  • Pearl sugar for garnishing


  • 1. Heat oven to 200 C
    2. Mix together butter and sugar until white.
    3. Whisk the egg and pour into the butter and sugar mixture.
    4. Seperately mix together flour, cocoa powder and baking powder, then pour the dry mixture into the batter.
    5. Work together the dough and share it into 6 smaller parts. Roll out each part into long "sausages" and place on a baking sheet.
    6. Flatten to strips and pour on pearl sugar.
    7. Bake in oven for around 5-8 minutes.

    9. Quickly slice the strips diagonally while they are still hot.
